Off season ongoings at the winery - winter update from Mendoza< back to Our Journal

The harvest may be done and dusted for another year but work doesn't stop for our team at the winery. Winter days in the Uco Valley are often fine and pleasant (by UK standards!) but the nights can be distinctly chilly!

Since our last update, our 2013 wines have been through their primary fermentations (cold maceration, alcoholic fermentation and post fermentative maceration) and they've been pressed using a small hydraulic press to gently extract the skin and seeds.

The 2013 vintages are now in barrel undergoing malolactic fermentation. Weekly batonnage (stirring of the lees) is being carried out to improve the mouthfeel and structure of the wines and this will continue for some weeks.

Another much anticipated off season event is the labelling and dispatch of our Carmelita Vista Malbec 2012. Not long now until it's on its way to us. We'll have more news of its UK arrival soon!
